Hey everyone! I’m on the hunt for some new recipes to try, especially for weeknight dinners. What’s your go-to meal when you just want something comforting and quick? Would love to see some of your favorites or any cooking tips you might have!
 
One of my favorite recipes over the last 1.5 years has been pancakes. I decided I was fat back in Feb 2024, and by Feb 2025 I had lost over 60 lbs. I've been eating a high protien low carb diet, and maintaining my weight eating around 2000 calories a day trying to intake 200 g of protein or more per day. I don't worry about fat intake unless I'm close to my daily calorie limit, and try to limit my carbs to less than 100g per day.

Here is a low carb high protein pancake recipe. Each pancake is 50 cal, 9.6 g protien, and 3.7 g net carbs. I like to use a food scale to weigh my ingredients out.

Dry ingredients:
King Arthur Keto Wheat Flour-50 g
Whey Protien powder-120 g
Baking Soda-1.5 tsp
Baking powder-1.5 tsp
Salt (optional)-¼ tsp or less
Swerve 0 calorie confectioners/baking sugar 2 tbsp (optional,
I don't use depending on protein powder used)

Wet Ingredients:
Oikos Triple Zero Vanilla greek yogurt-226 g
Liquid egg whites-92 g
Lemon juice-2 tbsp
Vanilla extract-1 tsp

Mix dry and wet ingredients separately, then add dry ingredients to wet and mix until barely combined but don't overmix. Let the batter sit for 10-15 minutes then cook like normal pancakes. This should make 16 pancakes 3-3.5" diameter.

I often mix in fresh or frozen berries to the pancakes as well. If I dont mix them in I'll top pancakes with butter, fresh berries, and use a sugar free pancake syrup that's around 15 cals per serving. You can also use a couple of tablespoon dollops of Cool Whip if you'd like.

If you're doing Keto, substitute the flour for Almond flour, egg whites for 2 whole eggs, and fat free yogurt for regular greek yogurt, cottage cheese (blended smooth), or sour cream. This will lower the protein a little, but bring your fat grams up.
